Before I get to my question, I just want to say that this kit was worth every penny. I'm just trying to see what is recommended in this situation because the bike runs fantastic.
I'm in Indiana so I went with the larger jets and 2 shims and 2 1/2 turns out on mixing screws. Idle is 1200 +/-10. I can open the throttle wide open while in neutral, blip it, etc and it doesn't hang, bog, anything of that sort. If I'm just cruising in 3rd / 4th and I open the throttle all of the way, it accelerates until a certain point (Higher RPM) then it'll almost stutter twice rapidly and continue accelerating without an issue. I'm going to continue trying a few things but I was just curious if anyone else has had this issue and found a fix.

Need more info like what intake (air filter velocity stacks), exhaust, with/without baffles, valve adjustment. Indiana is about 600' ASL so altitude is not really a factor. This is important because your carb jetting is dependant on how much air you can push through the engine. More air, more gas is needed. Carburetors work in zones of throttle position. WOT is using a combination of the main jet and needle in addition to the the other zones. I think you are jetted too fat, rich. Drop it down a size in main jet and needle position. Or, if you have any restrictions in your air flow, open it up. Not advised to run without an air filter in Indiana. Especially this time of year.
I just repaired a XR650L that went through a dealership and two indy bike shops who couldn't find the high RPM cutouts. It took me about a week to figure out it was running too rich in WOT. My solution was to desnorkle the airbox. More airflow countered the rich condition and big red woke up after 20 years of frustration. Everyone thought it was electrical because it would cutout lige losing spark.

@John Rocha there are two bowl vents on your carbs, they are brass and towards the center of the carb bank. put about a foot of hose on each one and route them to the back of the bike down through that window in the frame right by where the tank bolts in. sometimes they get finicky with the wind going over them and the bowls wont fill with fuel.
