New rider old bike and I need help figuring out what it needs done

Hey there, as i said I am very new to riding and working on bikes, im much more used to cars
I dont yet have my endorsement but im leaving to ride on my dad's 07 Honda shadow 700, fun and amazing bike very responsive and im enjoying it a lot. My late uncle had a 07 Honda shadow 1100 with 3k miles that once it goes through the courts my cousin is willing to sell for 2.5k to me. It runs and drives but with its age I think its going to need all new lines and a lot of parts so while im tearing it apart I want to rebuild the carb, but I dont know what type of carb rebuild kit I want to put on it. Brutal Customs has a kit for it that I love the sound on but I dont know if that would make the 1100 to powerful for me as a beginner or if theres a better option for me
For reference im 19, 6 ft 2, 300 lbs so I am comfortable with the size of the 1100 but I dont want to do something extreme if its not best for the bike and myself
