Best Honda model for my chopper?

  What's the best platform and model years for building my first chopper?  VT600, the 750s, or VT1100?  I've enjoyed TJ's videos.  I found several GREAT condition stock bikes, but I know there are models/years that are better than others - some you should definitely stay away from.
  I'm GenX (now we're the old school) mechanically inclined, and I can read.   This will be my first chopper build (I have a HD bagger and a chopper, but want something different that I built).  I want to build a "Captain America" 70's-style long chopper and not a bobber - looking for good frame geometry and reliability.
